So You Wanted Recipes!

I guess I got told!!! Apparently it is rude to post photos of great food without including the recipes….oops:)) Who knew???

Soooo, here’s the recipe for this delicious cobbler:

Yes, I found this on Pinterest…yummy!

You need: 1 16-oz. pkg. of any kind of frozen fruit ( I have used peaches and dark cherries). Place the frozen fruit in the bottom of a 9×13 pan.

Then a package of white or yellow cake mix. Sprinkle it, as is, over the fruit in the pan.

Finally, a can or equivalent amount of 7Up, Sprite, Squirt…whatever…it also can be diet!!  Pour over the dry cake mix enough to wet everything.

Do not stir!!!

Bake for about an hour, 350 degrees.

That’s it…delicious!

Now for Spaghetti Salad…lots of different names, but that’s what we call it. This recipe comes from a long-time friend who gave the recipe to F2. Our family loves it!!

Ingredients:

Cook 1 lb. of spaghetti

While that is cooking  combine these ingredients:

1 green pepper, chopped

1 cucumber, chopped

1-3 tomatoes, chopped

1 bottle of McCormack’s Salad Supreme

1 cup of Parmesan cheese

1/2 of 8oz. bottle of Wishbone Italian dressing

 

Add in drained and cooled spaghetti(run under cool water)

Mix and refrigerate.

When ready to serve, add rest of Italian dressing.

Everyone seems to love it:))

 

Whew! Have I taken care of my obligations now??

1) working on doing 26 acts of kindness…love it!

#1 & #2 – drug store gift cards left at the pharmacy

#3, 4, & 5 – small box of chocolate to smiling cashiers

#6 – 12 – bought a book for each grade level and dropped them off in classrooms


#13 – Barnes and Noble gift card for media center person to buy books for school

#14 – today when I deliver Meals on Wheels I’m giving each senior a flower also :)

2) continuing to come up with ideas in the coming weeks to finish out 26 acts…and hopefully continue with more

ideas: gift cards for crossing guards and police at schools, gift cards(or $) stuck to packages of diapers at KMart and Target, buy towels for rescue centers, buy socks and/or mittens for senior center…..do you have any more for me??

 

3) new sugar cookie recipe was yummy and easier than cutout cookies!!

Keep finding the joy this season…laugh with your kiddies:) Make beautiful memories!!

Comfort Food

Sunday was a ‘make a favorite meal’ day for me! I learned how to make pot roast from my mother-in-law when F2 and I visited them after we were married. She made this delicious dinner often and shared how to do it….not much to it, but our family has always loved it. I make it now when the guys come and give them leftovers to take home. On Sunday, they were both busy but plan to stop by this week for some pot roast, potatoes, and carrots.

brown both sides and onions, add water and/or beef stock...cook at least 4 or 5 hours

All this is done on top of the stove, uncovered. About an hour before you want to serve it, add potatoes and carrots.

After removing the meat and vegetables, make a delicious gravy….I always use cornstarch instead of flour, never any lumps that way:)

 

Just sharing because I love it…it brings me happiness!

Corn and Eggs…

Corn and eggs? No, not together! I just have to share these two important summer ‘findings’ !!!

Many of you will have already seen them on blogs or pinterest, but for those of you who haven’t seen them yet – Eureka!

1)  hardboiled eggs…by baking!

I love deviled eggs but rarely make them. I have a hard time cooking them correctly…is the water boiling enough, covered or not, remove from heat..maybe…how many minutes…arghhh! The eggs would often not turn out correctly. So the new plan: Take the eggs directly out of the carton and put them either right on the oven racks or in muffin tins in a 350 oven and bake for 25-30 minutes. Take out and put in ice water, then proceed normally for whatever recipe you need. It’s amazing! Perfectly cooked eggs:)  If you have slight scorched spots just remove them with a knife..they are just on the surface!  See!

2) corn on the cob…the easy way

for any number of ears…take the corn still in the husk and put in the microwave…cook 4 minutes per ear. Then remove, they will be hot. Cut the stalk end off about 2 rows into the kernels (husk still on). With a towel or potholder, grab on to the silk end and shake the cob out – you may have to slice the husk a little to allow the corn to slide out. When the corn slides out it has no silk on it…since you are holding it in your other hand!! Amazing! This is perfect when you don’t want to heat up your kitchen with boiling water or when you only want one ear of corn. I love it!

cook, then cut right end, hold left end and slide corn out...

1) delicious food at a bbq place that gives me happy Alabama memories!!

a delicious wrap and mac and cheese....check out how L makes a lovely palette of sauces to try:)

an over-the-top delicious pulled pork and cole slaw sandwich....sooo yummy...reminds me of gibson's in huntsville:)

 

2) Does anyone remember these….non pareils…still not sure how to pronounce them. But I used to have them at Gramma Horn’s house. Memories are popping!!

ahhh...

3) and speaking of Gramma’s house….want to see it?? Here is the awesome house on Connecticut in Marysville…

I know my brother will have great memories from this pic...

and their teeny, tiny one-car garage...

….and the weather is perfect….70′s and sunny…life is good:)
